When I first went a year ago, they used a 2 group Aurelia from Nuova Simonelli which was the standard machine used for the World Barista Championships till this past year. This time around, they changed up to the Gravimetric Victoria Arduino VA388 Black Eagle, one of the first to appear in the Texas coffee scene. Coffee machines is only one of the pillars of a good shot, the barista and the beans (type, roast, grind, dose, & tamp) account for the majority of the rest. They have the machines for sure, and I found over the last 3 visits that their baristas are some of the better trained ones in Texas. The coffee comes from Greenway Coffee’s David Buehrer. Just in the last few years I have noted that his roasting is different and both the blends and the single origins have a more West Coast flair (slightly lighter roast) than before.   I am not sure that this is true, but I have found that the various expresso drinks have a more mature and complex tasting notes.   This location has a great vibe and their menu for sweet and savory is quite varied. This is one of my favorites in Houston and is very close to Southside another favorite of mine.
