1 Short Macchiato - 1 Visit



Last year I wrote the following first paragraph for the Stanley location. “If you are looking for the machine, the Synesso is in the warehouse. Instead Derek is training for the 2013 World Barista Championship on the machine that he will be judged on. It is Nuova Simonelli that he is tuning his skills on. This tells you that Derek is serious about his coffee.”

Well, the Synesso is back out. It’s in full force front and center in Sheung Wan. A Matte Black Synesso. Wow!

Derek the owner got his MBA at Michigan State and headed west where he got his practical training at the Hayes Valley Blue Bottle.

Back in Hong Kong, Derek and his friends created the Cupping Room. It serves very good coffee in all forms. Derek and his wife Kieve are super friendly. They remembered my 1 visit to their store in Stanley last Christmas. They no longer own the store there, but are focusing their entire attention to Sheung Wan.

They were also able to convince Counter Culture Roasters to allow them to showcase their beans. Counter Culture has so far only allowed Derek (1 store outside the US in Asia) to showcase their beans. Now that says respect for Derek who is a 2 time Hong Kong Barista Champion.

The shop is very cute, and the coffee is a familiar excellence as roasted by Counter Culture, and carefully extracted by Derek and his team.
